Brewing fine beers with up to 16% alcohol requires expertise, experience and the right yeasts. Only strong beers have enough body to mature in old rum, whiskey, tequila or cognac barrels after weeks of fermentation in open vats. This takes place in the 300-year-old monastery cellar. Where the priests used to mature their wines, delicious PILGRIM Grand Cru beers are now stored in dozens of barrels. During barrel ageing, an exchange of substances takes place in the wood and in the beer. The process depends on the climate. Perhaps the mystical powers of the monastery help: our wood-barrel matured Pilgrim Barrique Grand Crus certainly taste excellent. They are storable delicacies with the potential to increase in value. It is worth stocking up.
