With their spicy-piquant taste, these yeast flakes are suitable as an addition to many cold and hot dishes.
Special features: They have a high content of vitamin B1. Since this vitamin is very sensitive to heat, molasses yeast flakes must not be cooked with food, but only added to the finished dishes.
Production:The culture medium for yeast propagation consists of beet molasses. Mineral salts and vitamin preparations are added to the beet molasses to ensure optimal yeast growth. The resulting yeast mass is gently dried. Heated rotating rollers are wetted with yeast cream. The heat causes the yeast cells to open and the yeast cell water to evaporate. Due to the extracted heat of evaporation, temperatures of just under 100 °C act on the yeasts for only a few seconds. As a result, the yeast constituents are hardly affected at all. The yeast flakes are dried within one revolution of the roller. They are continuously scraped off the roller.
