But how does a soybean turn into a soy crispy? The production of crispies uses a process called extrusion in the food industry. This method is used to shape and structure protein-rich raw materials. This is how these little protein balls are made. First, a mixture of soy, corn, and cocoa is prepared, which also includes water. By heating, the "dough" is compacted in screw presses and then pushed through a nozzle. The narrow nozzle causes a drop in pressure, causing the mixture to expand, dry, and take on a balloon shape.
