In southern Germany, Filderkraut is almost a cult plant: huge, heavy cabbage heads that taper elegantly to a point, taking the whole summer to develop their wonderfully mild aroma. It is unmatched as sauerkraut, but also excellent as a salad or briefly steamed. Another advantage: Filderkraut does not leave a cabbage smell in the kitchen.
