    Japanese knife

Hello, when you buy an expensive Japanese knife, you get the impression that you're buying an endangered know-how:

You think of a septuagenarian blacksmith with a white beard working alone in the sooty atmosphere of his
forge... the holder of an age-old tradition.

Unfortunately, this knife has never seen the hand or hammer of a blacksmith. It's a purely industrial product made from powder agglomerates compacted and hammered by machines on a production line.

Even the sharpening is done in an electrolytic bath... you can see it on the blade.

I strongly advise against buying this product. Miyabi is better in the same price range.

    Pro

    • Pretty wooden box
    • Superb wooden handle
    • Excellent grip
    • Good fit

    Contra

    • Too light
    • Too shiny
    • Back of blade much too thin
    • Pure industrial product
    • Polished in an electrolytic bath, no mechanical polishing
    • Too expensive
    • Fair damage
    • Overall impression of artificiality

    Excellent knife

I did not realize before that slicing and cutting can be so fascinating and breathtaking. I feel no resistance when hard vegetables like carrot or beetroot are sliced with this knife. It is so cool that I just can not stop cutting.
I have never had such an experience with a knife. I love it!

    Super knife

Beautiful workmanship and attractive design (well, the cow on the back of the pommel would not necessarily be). The knife is very good in the hand and also keeps what it promises when it comes to cutting.

    Pro

    • Good blade
    • Lies well in the hand
    • High quality workmanship

    Beautiful knife

Very nice knife, very efficient. Cuts like a razor. Also delicate, so I don't recommend the dishwasher. I really like the balance.
The Damascus steel is very well worked.

In short, I highly recommend this knife for a cooking
    enthusiast who likes to indulge.
