For polishing The high-quality Super Stone 10000 is manufactured in Japan. Thanks to its very fine grain, the Super Stone 10000 is suitable for fine polishing after prior sanding. The Super Stone 10000 is resin-bonded, which makes it extremely durable. The knife leaves virtually no marks on the Super Stone 10000. A few drops of water are all it takes to start sharpening. If the knives are already blunt, it is recommended to restore the basic grind first. For example, with the electric AP-118S sharpening set from KAI and the Super Stone 5000. Sharpening knives The whetstone should be completely immersed in water for about 5 to 10 minutes before use. There should always be a light film of water on the surface of the whetstone when sharpening. For knives sharpened on one side, place the sharpened side on the whetstone first. Please ensure that you maintain the angle specified by the factory. If possible, grind the knife at an angle of 45° to the whetstone (to achieve a larger contact surface), applying pressure towards the cutting edge and releasing the pressure when you move the knife away from the cutting edge. You should repeat this process partially with the same number of sharpening strokes. After you have sharpened the knife on the ground side, lay it flat on the hollow-ground side and repeat the sharpening process as described above, but only approx. 1/10 as many times as you have sharpened the knife on the opposite side. For knives sharpened on both sides, carry out the sharpening process in the same way as for knives sharpened on one side, but you must maintain a sharpening angle of approx. 15°. It is important that you grind both sides evenly so that you end up with a symmetrically ground blade.
