The significant high-carbon 9CR18MOV steel is refined through vacuum heat treatment and nitrogen cold treatment, achieving hardness levels of 58±2 HRC, which ensures corrosion resistance, rust protection, and toughness. The 2.5 mm ultra-thin blade allows for precise cuts that optimally preserve the freshness of fruits and vegetables and the delicate structure of meat. The handle made of fine summer sourwood, a rosewood from Southeast Asia, offers ergonomic and balanced handling, minimizing wrist strain and allowing for flexible adjustment of cutting angles.
